Would something like "Ich gehe aus mit ihr" make any sense or is "Mit der gehe ich aus" the only way it can be said?

How does this translate to "I am going out with her"? Does it not translate to "I am going out with the." Whatever that means.

Thanks for the help (again) Christian! How does Duolingo expect me to know that for starters, especially out of context with no word or sentence to reference back to?

It doesn't; it expects you to learn it by seeing, getting it wrong, then learning the right answer. DuoLingo doesn't teach by explanation; it teaches by trial and error.
