The answer states "You read"="Sen okursun" while "Sen okuyorsun"="You are reading", but Turkish textbooks that I'm using say that Sen okuyorsun can also be used for "You read" and that its use is becoming more common, so why is this not a correct answer?

It is amazing that in Turkish the color orange 'turuncu' is totally a different word from the fruit orange 'portakal'...

Why is 'you are reading an orange book' wrong?

Because 'you are reading an orange book' is 'sen turuncu bir kitap okuyorsun'

Back in the 1990s when I first learned Turkish in Ankara, I was taught portakal rengi for orange. Is this no longer in use?
