Cuán y cuan. In my many years of Spanish, I've never encountered these words before. I guess they mean how and as.

I've never seen it either, but it's explained here.

Las palabras qué, cuál/es, quién/es, cómo, cuán, cuánto/a/os/as, cuándo, dónde y adónde son tónicas y se escriben con tilde diacrítica cuando tienen sentido interrogativo o exclamativo.

You're right, but currently "cuan" without the accent is very rare and, as you said, means "as".
"Cuán" with the accent is mainly used as an intensifier: "¡Cuán poderoso es Dios!" (How mighty God is!), "!Cuán rápido se esparcen las malas noticias!" (How fast bad news spread!).
