If both are correct, how do you know when it would be "The elephants drink water" or "The elephants are drinking water?"

By context, just as you know in English by context if you should use the continuous or not.

It's just like German vs English
In german there is no differencs between something "you do" and something "you are doing" other than the context. For example, you wouldn't ask someone on a saturday whether they are going to school, but you might ask whether they go to school.
