So when do you use å jobbe vs å arbeide? And where does å virke come in?

Å jobbe sounds more formal than å arbeide.

Å virke is a verb about items working (functioning). It's not about doing work.

Virke can also be used when you're talking about how somthing looks/seems:

Han virker litt trøtt = He seems a little tired
