Why isn’t it відмідь і мід? The vowel doesn’t change even though those are closed syllables.

I wonder if the word for bear comes from "one who eats honey"...Anybody?

It does. Just like in Germanic languages, a bear being a scary beast, the original word was replaced by a euphmeism at some point in the past.
