is skjegg close to shaggy ?

They both stem from the Proto-Germanic "skagją".

Would you do it for a Scooby-Snack?

is beard countable? pretty sure it should be "she likes men with beard" sans the "s"...

Beard is countable in English, "she likes men with beard" while it gets across the meaning is confusing to my ears, I would vastly prefer "she likes men with beards".

Beards are definitely countable. It's men with (or, who have) beards.

The only other way of saying it would be "bearded men".
