Yo sounds approximately like Joe. But it can vary according to the country.

Living in Texas, I mostly hear yo as in "yogurt". Either way, people will understand you

It depends on where the Spanish is being spoken. Latin American Spanish sounds slightly different from European Spanish, so both ways of pronunciation are correct.

Hi, I'm Spanish and here, in my part of Spain at least, (but I think in the rest of Spain happens the same) we don't pronounce it as "Joe" I would like to explain you this but I don't know how without using the Spanish phonetic, our "o" is pronounced differently from yours, and that's where the problem is, if you were Spanish I'll tell you: don't say the final "u" but I think you can't understand what I want to say, sorry.

Of course the pronunciation varies slightly between countries, for example I think in Argentina they pronounced it as "sho".

I can stand on a street corner in Mexico and hear both versions spoken by the locals. Last summer in Mexico I had two teachers, one said Yo and one said Jo. In Argentina it is always 'zho'
