Gal seems to come from Old Norse 'galinn' from the verb 'gala' (English 'gale' also related to 'yell') which means to speak magical incantations (cf: galdr), thus the adjective means 'enchanted' or 'possessed by galdercraft', literally 'galen' without the participle suffix.
