Do you mean the "dufoooooooje" slowly and then "li alvenis malfrue" quickly? Everything on the Esperanto course sounds like that.

Why is it dufoje for twice, but unuafoje for once (ie not unufoje)? It doesn't seem consistent..

It is "unufoje" for "once". "Unuafoje" is "for the first time".
